A calm, well:run kitchen serving a busy, lunch:led British brasserie with strong local trade, offering a Brasserie style menu with British and wider European influences. The restaurant can do 200 covers and is operating at 2 rosettes

The role
• Support the Head Chef with day:to:day kitchen operations
• Run service with confidence, especially lunch service
• Lead sections during busy periods with consistency
• Train and support junior chefs on shift
• Maintain food safety, hygiene, and kitchen organisation
• Support breakfast, afternoon tea, and light room service

The offer
• Salary A GBP 43,000
• Tronc circa A GBP 6,000
• 45 hours per week
• 5 days per week
• 29 days holiday including bank holidays

The background
• Sous Chef or strong Junior Sous ready to step up
• Solid brasserie or restaurant experience
• Exposure to hotel or mixed:service kitchens
• Comfortable in high:volume lunch environments
• Calm, organised, and disciplined on service
