JOB OVERVIEW

The Sous Chef works closely with the Chef and assist in overseeing all aspects of kitchen operations. This job is responsible for ensuring the highest standards of food preparation, presentation, and quality in a fast-paced and dynamic environment.

KEY DUTIES AND RESPONSIBILITIES
• Collaborate closely with the Chef to plan menus, develop new recipes, and create innovative dishes while ensuring they align with the culinary concept and meet the highest quality standards.
• Supervise and coordinate the activities of the kitchen staff, ensuring smooth operation during all service periods.
• Assign tasks, monitor performance, and provide guidance to maintain an efficient and productive kitchen environment.
• Prepare and cook a variety of dishes, ensuring adherence to recipes, portion control, and quality standards. Take the lead in preparing complex dishes and oversee the preparation of mise en place.
• Maintain a keen eye for detail to ensure that all food items leaving the kitchen are of the highest quality, properly seasoned, and well presented.
• Conduct regular inspections of food stations to guarantee cleanliness, organization, and compliance with health and safety regulations.
• Mentor and train kitchen staff, including line cooks, commis chefs, and kitchen assistants, to enhance their culinary skills, knowledge, and understanding of kitchen operations.
• Assist in monitoring inventory levels of food supplies, equipment, and ingredients. Collaborate with the Chef to create and update inventory lists, place orders, and ensure proper stock rotation to minimise waste and control costs.
• Contribute to menu planning and development, suggesting new dishes, seasonal ingredients, and culinary trends to enhance the dining experience. Ensure that menu items are cost-effective and can be executed efficiently within the kitchen's capabilities.
• Enforce strict adherence to health and safety standards, including proper food handling, storage, and sanitation practices.
• Monitor kitchen equipment for functionality and cleanliness, and address any maintenance or repair needs promptly.
• Uphold company values throughout business practices and utilise sound judgment in decision making
• Any other additional duties as may be required by management based on needs of the business

POSITION REQUIREMENTS
• A minimum of 3-5 years of related experience.
• Proven experience in a similar role within a high-volume and upscale Italian or Mediterranean dining establishment
